What to do with leftover fries...

Saltado con Pollo

I always used to hate leftover fries.

I mean... Unless you have the patience to reheat them in a broiler or toaster oven, what else would you be able to do with them? And even then, they still have that stale leftover taste and they're never quite the same as when you had them at the hamburger joint for lunch.

But the last time I had leftover fries, inspiration hit!


The Peruvian dish is a favorite of mine, and I often crave it - debating whether or not to wait in the long lines at Mario's Peruvian.

After doing a little online research, MS and I were set to make our very own version with the following ingredients:
+ Chicken - cut into bite-sized pieces
+ 1 can of diced tomatoes
+ 1 Tbsp (or so) soy sauce
+ 1 Tbsp vinegar
+ Handful of cilantro - diced
+ 1 small onion - diced
+ Cloves of garlic - diced
+ 2-3 serrano chiles - diced
+ Juice from 2 limes
+ Juice from 1 large grapefruit
+ Salt / Pepper to taste
+ Vegetable oil
After cooking everything together, we plated it with some Japanese white rice and topped it with some fresh cilantro leaves. The end result was a deliciously savory dinner with sweet, spicy, and bold flavors in the mix. The chiles definitely gave the dish a nice kick. And you would never know that those were the leftover fries that almost didn't make it home!

brilliant! although, very embarrassingly, i totally will eat leftover fries, cold, right out of the fridge. standing there with the door open. straight from whatever cardboard, paper, styrofom container they are in. :)

hahah! oh, the days of college youth when i too stood by the fridge... often after a night of dancing and libations. ;)

Interesting recipe -- will check out if I ever have leftover fries... (I have a habit of finishing the fries first before working off the main course - since that *always* is a better leftover than fries.)

Ain't saltado grand!?

I love making saltado. I love it so much, in fact, that I don't wait until I get leftover fries. I make fries for the purpose of making saltado. I might have to make some tonight!

mmm, too bad we didnt have da mix for the tasty peruvian green sauce. that would have been da bomb.
