I always used to hate leftover fries.
I mean... Unless you have the patience to reheat them in a broiler or toaster oven, what else would you be able to do with them? And even then, they still have that stale leftover taste and they're never quite the same as when you had them at the hamburger joint for lunch.
But the last time I had leftover fries, inspiration hit!
SALTADO CON POLLO
The Peruvian dish is a favorite of mine, and I often crave it - debating whether or not to wait in the long lines at Mario's Peruvian.
After doing a little online research, MS and I were set to make our very own version with the following ingredients:
+ LEFTOVER FRIES!After cooking everything together, we plated it with some Japanese white rice and topped it with some fresh cilantro leaves. The end result was a deliciously savory dinner with sweet, spicy, and bold flavors in the mix. The chiles definitely gave the dish a nice kick. And you would never know that those were the leftover fries that almost didn't make it home!
+ Chicken - cut into bite-sized pieces
+ 1 can of diced tomatoes
+ 1 Tbsp (or so) soy sauce
+ 1 Tbsp vinegar
+ Handful of cilantro - diced
+ 1 small onion - diced
+ Cloves of garlic - diced
+ 2-3 serrano chiles - diced
+ Juice from 2 limes
+ Juice from 1 large grapefruit
+ Salt / Pepper to taste
+ Vegetable oil
